Green Peas Soup
I think green peas are an underrated delicious green veggie. I've always loooved them since I was really young. Since they're in season now here is a delicious soup recipe.
½ cup dried split green peas or 1.5 cup fresh green peas
2 handfuls spinach
1 tbsp grated ginger
1 tsp grated turmeric or ½ tsp turmeric powder
1 celery stalk chopped into small pieces
1 handful chopped fennel
1 handful parsley leaves
1/2 handful cilantro leaves (1 handful)
1 tablespoon white miso
1 cup coconut or almond milk
2 tbsp ghee or cold pressed sunflower oil
½ tsp salt
On a medium heat add ghee, salt, ginger, and turmeric. When the aroma of the spices comes up add in chopped celery and fennel. Sautee them and when they’re tender add in the peas with 2 cups of water. If they’re fresh add them in with the spinach and simmer for 5 minutes. Add in the coconut milk, parsley, cilantro, and white miso. Then use a hand-blender or a regular blender to blend to a somewhat smooth texture. Garnish with toasted sunflower seeds and some soft herbs.
Eat it with roasted turnips and some coconut rice :)
