Pancakes Love


Pancake Batter

  • 1 cup spelt flour (or whole wheat flour)
  • 1 cup oat milk or almond
  • 2 tbsp any oil that doesn't have much flavor in it
  • 1 tsp apple cider vinegar
  • 1 tbsp maple syrup
  • 1 tsp baking powder
  • 1 tbsp ground flaxseed
  • 3/4 tsp cinnamon
  • 1/2 cardamom
  • 1/4 tsp salt
  • A bit of vanilla bean

Mix ingredients gently to make a batter. It should be thick not very runny. Cook first side until bubbles form then turn to the other side. Top with maple syrup, or honey, or yogurt mixed with honey, roasted nuts. Fruit is not recommended to be mixed with other foods but it’s okay to have small amounts of cooked apples or bananas or berries on top (without yogurt).
Below is an alternative to jam :).

Beet jam

  • Ten dates
  • 4 medium beets
  • 1 tbsp coconut oil
  • 1 tbsp honey
  • ¼ tsp salt
  • 1 tbsp grated ginger

Soaked ten dates in water for a couple of hours. Roast four medium beets at 180C for about 45 minutes. On a medium heat add coconut oil with the salt and ginger. Once the beets are done blend everything together till smooth.
