Summer Peach Pie

Peach Pie

Crust

  •  
  • 1/2 cup buckwheat flour
  • 1/2 cup oat flour
  • 1/4 cup shredded coconut
  • 2 tbsp tapioca starch
  • 3 tbsp ghee
  • 1 pinch of salt
  • 2 tbsp maple syrup
  • 1 tsp anise seeds
    Mix all the ingredients together well then wrap them up and put them in the fridge for 15-20 minutes. Once the dough is chilled, take it out and spread it in a round 9 inch pan. Make sure you have extra dough on the sides that you will fold over the peaches.

Filling

  • 3 peaches chopped into moon shapes
  • 2 tbsp tapioca flour
  • 2 tbsp maple syrup
  • 1 tbsp lime juice

Mix tapioca with maple syrup and lime juice. Once the tapioca is mixed in well add the mixture on the peaches and make sure everything is covered. Arrange the peches starting from the middle of the pan and going outwards. 

Place in the over for 20 minutes or until the crust is bronzed from the top!
